The LED is controlled by the current; the higher the current, the brighter it is. The driver (power supply for the diode) usually outputs a constant current, but there are PWM-controlled drivers, meaning there is a PWM input on the driver, and according to the signal on this input, the current output by the driver changes, thus affecting the brightness of the diode.

The PWM driver will also need a controller to manage it... (sending those very signals). It doesn't seem very rational to me to adjust the brightness of just one red channel. For a budget option, you can look for a driver with "standalone" manual dimming (an additional controller won't be needed for it).

A controller is needed for all the listed drivers, although it can also be done manually.
