When calculating the volume of a marine aquarium, is the volume of rocks and sand subtracted? For example, I want a 300-liter marine aquarium, and I assume there will be about 50 kg of live rock plus sand. Should I consider that the water volume will be around 250 liters for selecting the equipment's performance?

approximately.

It depends on the equipment. If it's a foam generator, then it's better to have twice the total volume (capacity); if it's a pellet reactor, then consider the water without stones and soil.
